Being a good person is much harder than being a real person. In Red Dead Redemption, there are few activities that will increase your honor, and such activities are few and few in between.

There is, however, a very fast way to increase your honor level very quickly without using any cheat codes. This can be done be repeatively winning duels.

Purposefully cheat whenever you have the chance. A poker player will call you out for cheating, and challenge you to a duel. Killing your opponent will earn you honor points though disarming will earn you twice as much.
